Directions
- Heat olive oil in a pan over medium heat.
- Add the chopped onions and cook until softened.
- Stir in the ginger, garlic powder, and curry paste, cooking with the onions for 2-3 minutes.
- Add the cinnamon, chili powder, chopped tomatoes, and half of the water. Cover and simmer.
- Once the tomatoes have broken down to a chutney-like texture, add the chopped potatoes and cook for 10 minutes.
- Add the beans and their liquid to the curry mixture. Stir, cover, and cook for 20 minutes, adding remaining water as needed.
- Once the potatoes are cooked, remove from heat and serve.
