- Place the lentils in a pot and cover with a couple inches of water. Bring to a boil over high heat and boil until tender (about ten minutes).
- While the lentils are boiling, mince the garlic and peel and grate the ginger (use a small cheese grater). In a pan, melt butter and add cumin seeds, curry leaves, mustard seeds and onions. Sautee onions untill golden brown. Add ginger, garlic, coriander powder, cayenne, salt and pepper. Finally add tomatoes and cook untill it forms a well cooked mixture.
- Add this cooked mixture to the lentils and top the lentils with coriander leaves.
