  1. Preheat the oven to 350° F. Line a rimmed baking sheet with foil and lightly oil or coat with nonstick spray.
  2. Peel and slice the eggplant into 1/2-inch rounds. If desired, salt the slices and let them drain in a colander for 30 minutes, then pat dry thoroughly.
  3. Place the seasoned breadcrumbs in a shallow dish. Spread mayonnaise over both sides of each eggplant slice, then press into the breadcrumbs to coat evenly.
  4. Arrange the coated slices on the prepared baking sheet. Bake for 20 minutes, flip, and continue baking 20 to 25 minutes more, until both sides are golden and the eggplant is tender.
