- Prepare the produce: chop the onion, mince the garlic, grate the ginger, and peel and cut the eggplant into 3/4-inch cubes. Roughly chop the cilantro, reserving a small handful for garnish.
- Heat the oil in a 4-quart pot over medium-high heat. Add the onion and cook, stirring, until translucent, 5 to 7 minutes.
- Stir in the garlic and ginger and cook 1 minute. Add the eggplant, curry powder, fennel seed, salt, black pepper, and cayenne. Splash in a little vegetable broth and cook, stirring, until the eggplant begins to soften, 1 to 2 minutes.
- Add the lentils, most of the cilantro, and the remaining broth. Bring to a boil, then reduce to a gentle simmer, cover, and cook until the lentils are tender and the eggplant is very soft, about 35 to 40 minutes.
- Rinse and drain the cowpeas. Stir them into the pot with the tomato paste and lemon juice. Simmer uncovered to thicken, or add a splash of extra broth to loosen, 5 to 10 minutes. Taste and adjust salt and spices.
- Let the curry rest off heat for about 10 minutes for the flavors to meld. Serve topped with the reserved cilantro.
