Directions

  1. Preheat oven to 350°F.
  2. Place potatoes in a pot and cover with water. Bring to a boil and cook until fork tender; drain and set aside to cool.
  3. In a saucepan over medium heat, cook onion in butter until tender, about 5 minutes.
  4. Blend in flour and salt. Add milk all at once; cook and stir over medium heat until thickened and bubbly.
  5. Add cheese, stirring to melt.
  6. Stir in parsley and mustard.
  7. Fold in potatoes and chopped hot dogs.
  8. Place mixture in a 1-quart casserole dish.
  9. Cover and bake for about 35 minutes or until heated through.
