Directions

  1. Chop the scallions and slice the cheese. Remove the casings from the sausages.
  2. Preheat the oven to 450°F. Cut the bread horizontally in half and place the halves, cut side up, on baking sheets. Mix the scallions with 6 tablespoons of olive oil, season with salt and pepper, and reserve 2 tablespoons of this mixture. Spread the remaining mixture over the bread and top with cheese.
  3. Sauté the Italian sausages in a large nonstick skillet over medium-high heat until cooked through, breaking them up with a spoon, about 7 minutes. Divide the sausage among the bread halves and bake until the cheese melts and the bread begins to crisp, about 10 minutes.
  4. Meanwhile, heat 1 tablespoon of olive oil in each of two large skillets over medium-high heat. Crack 4 eggs into each skillet, sprinkle with salt and pepper, and cook for 2 minutes. Remove from heat and let the eggs stand in the skillets while the pizzas bake.
  5. Arrange 4 eggs atop each pizza and spoon the reserved onion oil over the eggs. Cut each pizza between the eggs into 4 pieces.
