  1. Heat the oven to 400°F. Pat the pork dry and season all over with the salt and pepper.
  2. Warm a large oven-safe skillet over medium-high heat. Add half of the butter and let it melt until foamy.
  3. Sear the pork on all sides until well browned, about 2–3 minutes per side.
  4. Push the pork to one side. Add the remaining butter and the garlic; cook, stirring, until fragrant, 30–45 seconds. Spoon the garlicky butter over the pork, then sprinkle with the parsley and thyme.
  5. Transfer the skillet to the oven and roast until the thickest part of the pork reaches 145°F, about 12–15 minutes depending on thickness.
  6. Set the pork on a cutting board and rest for 5 minutes to keep the juices in.
  7. Slice and serve with the pan juices.
