  1. Heat the oven to 350°F. Lightly oil a rimmed baking sheet and set aside.
  2. Warm the remaining oil in a large skillet over medium heat. Add the onion, carrot, celery, and garlic; cook, stirring occasionally, until softened and fragrant, about 5 minutes. Transfer to a large bowl to cool slightly.
  3. Add the ground beef, ground flaxseed, eggs, tomato juice, parsley, salt, and pepper to the bowl. Mix gently but thoroughly until evenly combined.
  4. Transfer the mixture to the prepared sheet and shape into a compact 9×5-inch loaf. Lay the bacon strips lengthwise over the top and sides, pressing to adhere.
  5. Bake until an instant-read thermometer in the center registers 160°F, about 1 hour 15 minutes. Rest 10 minutes before slicing.
