Directions
- Preheat the grill to medium-high heat.
- Slice the zucchini lengthwise. Brush zucchini and corn with the oil.
- Grill the zucchini slices and corn for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.
- Cool a bit. Once cool, slice corn off of cob and place in a large bowl. Add in the zucchini.
- In a small bowl, mix together lime juice, chopped cilantro, and chili powder.
