  1. Whisk together honey, mirin, soy sauce, rice wine vinegar, sesame oil, ginger, and white pepper in a bowl to create the sauce. Set aside.
  2. Heat one-third of the coconut oil in a pan and cook rice noodles according to package instructions.
  3. In a sauté pan, heat the remaining coconut oil. Brown the ground beef and add minced garlic.
  4. When the beef is nearly cooked, add water chestnuts, mushrooms, salt, and black pepper. Stir in the prepared sauce and chopped scallions.
