- Trim and halve the zucchini lengthwise. Scoop out the centers to leave 1/4-inch shells. Finely chop about half of the scooped flesh for the filling; reserve the rest for another use.
- Warm about two-thirds of the olive oil in a large skillet over medium-high heat. Add the onion and garlic; cook until softened, 2–3 minutes. Stir in the mushrooms and the chopped zucchini flesh and cook 2 minutes more.
- In a separate skillet, heat the remaining olive oil over medium-high. Add the ground turkey and cook, breaking it up, until lightly browned, about 6 minutes.
- Combine the turkey with the vegetable mixture. Stir in the white wine, tomatoes, basil, and rosemary; simmer about 1 minute. Remove from heat and drain off any excess liquid or fat. Let cool slightly.
- Fold in the Parmesan, egg, salt, and pepper until evenly combined.
