  1. Heat the oven to 375° and lightly coat a 9×13-inch baking dish with cooking spray.
  2. Trim and halve the zucchini lengthwise. Scoop out the centers to leave 1/4-inch shells. Finely chop about half of the scooped flesh for the filling; reserve the rest for another use.
  3. Warm about two-thirds of the olive oil in a large skillet over medium-high heat. Add the onion and garlic; cook until softened, 2–3 minutes. Stir in the mushrooms and the chopped zucchini flesh and cook 2 minutes more.
  4. In a separate skillet, heat the remaining olive oil over medium-high. Add the ground turkey and cook, breaking it up, until lightly browned, about 6 minutes.
  5. Combine the turkey with the vegetable mixture. Stir in the white wine, tomatoes, basil, and rosemary; simmer about 1 minute. Remove from heat and drain off any excess liquid or fat. Let cool slightly.
  6. Fold in the Parmesan, egg, salt, and pepper until evenly combined.
  7. Arrange the zucchini shells in the baking dish and spoon in the filling, mounding slightly. Pour about 1/4 inch of water into the dish around the zucchini.
  8. Bake until the zucchini are tender and the tops are golden, about 40 minutes. Let rest 5 minutes before serving.
