  1. Preheat oven to 350F.
  2. Blend red onion until minced. Remove excess water, return to food processor. Add 3 cloves garlic, marjoram, rosemary, 1/2 tsp salt and 1/4 tsp pepper until combined.
  3. Alternate between adding small handfuls of ground beef and ground lamb until well-mixed and a paste-like texture. Transfer to loaf pan, bake until 165 in the center, about 1 hour. Cool and cut into thin slices.
  4. Make tzatziki: combine yogurt, cucumber, 2 T olive oil, lemon juice, mint/dill, 3 clove minced garlic, 1/4 tsp salt until at desired consistency. Chill at least 1 hour.
  5. Assemble gyros with pitas, feta, tzatziki, and meat.
