  1. Preheat a nonstick skillet over medium heat. Lightly coat the surface with cooking spray just before cooking.
  2. Add oats, ground flaxseed, stevia, cinnamon, baking soda, and egg whites to a blender. Blend until very smooth, then let the batter rest 3–5 minutes to thicken.
  3. Pour the batter onto the hot skillet to make small pancakes. Cook until the edges look set and small bubbles appear on top, 2–3 minutes. Flip and cook until golden and cooked through, 1–2 minutes more.
  4. Serve right away.
