Directions
- Preheat the oven to 350°F. Grease or spray a muffin tin.
- In a large bowl, whisk the eggs, almond flour, ground flaxseed, psyllium husk powder, salt, black pepper, crushed red pepper flakes, coconut milk, and lemon juice until smooth. Let stand 5–10 minutes to hydrate while you cook the bacon.
- Cook the bacon in a skillet over medium-low heat until crisp. When nearly done, add the butter and melt. Transfer bacon to a board and roughly crumble, reserving the rendered fat and butter.
- Stir the scallions, garlic, chives, cheddar, and baking powder into the hydrated batter.
