  1. Spiralize the oriental (daikon) radish into noodle-like strands and soak in cold water for 20 minutes to mellow bitterness.
  2. Slice the ribeye into 1/4-inch strips. Toss evenly with the coconut flour and guar gum; let stand 10 minutes to help the crust adhere.
  3. Heat the coconut oil in a wok over medium-high. Add garlic, ginger, red bell pepper, and jalapeño; stir-fry until aromatic and lightly softened, about 2 minutes.
  4. Stir in the soy sauce, oyster sauce, sesame oil, rice vinegar, stevia, and sriracha; simmer 1–2 minutes until slightly thickened. Reduce heat to low to keep warm.
  5. In a deep, heavy pot, heat about 1 inch of neutral frying oil to 325°F. Fry the beef in batches without crowding, turning as needed, 2–3 minutes per side until deeply browned and crisp.
  6. Drain the beef briefly on paper towels, then add to the wok and toss in the sauce for about 2 minutes to coat. Stir in half of the scallions.
  7. Drain the radish noodles well and divide among plates. Drizzle with the olive oil, top with the sesame beef, and finish with sesame seeds and remaining scallions.
