- Heat a large pot or Dutch oven over medium heat and lightly coat with cooking spray. Add the sausage and cook, breaking it into small pieces, until well browned, 8–12 minutes. Drain excess fat if needed.
- Stir in the onion and garlic and cook until softened and fragrant, 2–3 minutes. Add two-thirds of the parsley, chicken broth, water, pasta sauce, bay leaves, and black pepper. Bring to a boil, then cover and simmer gently for 30 minutes.
