- Preheat the oven to 400°F.
- In a large mixing bowl, combine the ground chicken, 1/4 cup of the marinara sauce, all but one of the minced garlic cloves, half of the parsley, oregano, onion powder, salt, and black pepper. Divide the mixture into two equal portions.
- In a separate bowl, mix the ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, the remaining parsley, chives, the remaining garlic, and salt to taste until well combined.
- Place half of the meat mixture into the bottom of a 9.25 x 5.25 x 2.75-inch loaf pan, pressing evenly to the corners.
- Create a groove down the center of the meat and layer the cheese filling in the groove. Top with the remaining meat mixture, spreading evenly and pressing down.
- Bake for 20 minutes. Remove from the oven, top with the remaining marinara sauce, mozzarella, and Parmesan cheese. Return to the oven and bake for an additional 20 minutes. Slice and serve.
