Ingredients
Directions
- Whisk together garlic powder, onion powder, lemon pepper, parsley, oregano, and salt. Season the chicken thighs on both sides with some of the seasoning mixture, reserving the rest.
- Heat olive oil in a large pan over medium heat. Brown the chicken for 2-3 minutes on each side, then transfer to a plate and cover to keep warm.
- Add orzo, mushrooms, and the remaining seasoning mixture to the pan. Stir over medium heat for 2-3 minutes until fragrant and the orzo is lightly browned. Stir in the chicken broth.
- Return the chicken to the pan, placing it on top of the orzo and mushrooms. Cover and cook over medium-low heat for about 20 minutes until the liquid is absorbed, the orzo is tender, and the chicken is cooked through.
- Top with fresh-squeezed lemon juice and garnish with fresh herbs if desired. Serve and enjoy!
