Ingredients

Directions

  1. Prepare the mayonnaise by mixing the egg yolk, mustard, and 1 tsp of lemon juice in a medium bowl or using a blender or food processor.
  2. Whisk vigorously or blend on low, slowly adding the olive oil drop by drop to form an emulsion. Gradually increase the oil flow as the mixture thickens.
  3. Once thickened, incorporate the remaining lemon juice, and season with salt and pepper. Chill the mayonnaise.
  4. Cook the bacon in a pan over medium heat until crispy. Set aside.
  5. Assemble the wraps by placing turkey slices and tomato slices on the lettuce leaves. Spread with mayonnaise and top with bacon. Wrap and serve.
