  1. Preheat the oven to 350°F. Lightly oil a loaf pan or line it with parchment for easier removal.
  2. Warm the olive oil in a large skillet over medium heat. Add the chopped onion and red bell pepper and cook until tender, about 5 minutes.
  3. Stir in the garlic, chili powder, oregano, thyme, cayenne, and salt; cook 1 minute until fragrant. Add the thawed, well-drained spinach and toss to combine, then remove from heat and let cool slightly.
  4. In a large bowl, combine the ground turkey, whisked eggs, and almond flour. Mix gently with your hands until just combined.
  5. Add the sautéed vegetable mixture to the bowl and fold in evenly without overmixing.
  6. Shape into a loaf and place in the prepared loaf pan. Spread the ketchup evenly over the top.
  7. Bake until the center of the meatloaf reaches an internal temperature of 165°F, about 60 to 75 minutes depending on pan and oven.
  8. Let rest in the pan for 10 minutes, then slice and serve.
