Ingredients
Directions
- Preheat the oven to 450°F and place a rack in the upper third.
- Peel the carrots and sweet potato, and cut into fry-shaped sticks. Toss with half the taco seasoning, a pinch of salt, and one-third of the olive oil. Spread on a rimmed baking sheet and roast 15–20 minutes, turning once. Broil 3–5 minutes until browned and crisp-tender.
- Heat a skillet over medium-high with half of the remaining olive oil. Sauté the chicken strips until cooked through to 165°F, 4–6 minutes. Stir in the remaining taco seasoning, ketchup, and honey. Cook, stirring, until the sauce reduces and lightly caramelizes, 1–2 minutes.
- For the salsa, combine the tomatoes, onion, jalapeño, cilantro, and lime juice. Season with salt to taste.
- Fry the eggs in a nonstick skillet over medium heat with a light film of olive oil until cooked to your preference.
- Assemble the bowls with the roasted carrot and sweet potato fries, glazed chicken, fresh salsa, avocado, and eggs. Serve right away.
