Directions

  1. Rinse the rice under cold water until the water runs mostly clear.
  2. Bring 2 cups of water to a boil in a medium saucepan. Stir in the rice and salt, reduce heat to low, cover, and simmer until the water is absorbed and the rice is tender, about 15 minutes.
  3. While the rice cooks, chop the cooked artichoke hearts into small pieces.
  4. Remove the pan from the heat and let the rice rest, covered, for 5 minutes, then fluff with a fork.
  5. Fold in the chopped artichokes, Parmesan, and oregano. Taste and adjust salt if needed. Serve warm.
