- Place the pancetta in a cold pressure cooker in a flat layer. Turn on to the lowest heat to render the fat without adding oil or butter.
- Once the pancetta begins to sizzle (about 5 minutes), add the onion, carrot, and celery. Raise the heat to medium-low and cook until softened, about 10 minutes. Add a pat of butter or olive oil if needed.
- Increase the heat to medium and add the ground beef. Brown well, stirring occasionally, until the liquid evaporates and the fat sizzles, about 30 minutes.
- Add the wine and deglaze the pan, scraping up any bits. Let the wine evaporate completely, about 7 minutes.
