Ingredients

Directions

  1. Pour 2 cups of water into a medium saucepan and bring to a boil. Add the quinoa and 1 tsp of salt, then lower the heat and simmer for 15 minutes, covered. Drain and place in a bowl. Stir in lemon juice, olive oil, and additional salt to taste.
  2. In a large bowl, combine scallions, mint, cucumber, tomatoes, and a pinch of salt and pepper. Add the cooked quinoa and mix well. Add the feta cheese just before serving. Enjoy!
