- rinse the sabudana (tapioca pearls) twice, and soak in water overnight (add water only to the surface of pearls not more.
- Roast The Peanuts. you can also crush them after. or pulse to a coarse powder. Cube And Boil The Potatoes.
- add the peanut (/powder) to the tapioca + salt + sugar.
- in a large pan add ghee (or oil). splutter cumin and curry leaves. add ginger (finely chopped), chilli (chopped) and potatoes (cubed). fry till potatoes turn slightly golden.
- add tapioca peanut mixture and mix gently.
- cook till sabudana turns translucent. add lemon juice and cilantro.
