Ingredients

Directions

  1. Rinse the basmati rice and cook according to package directions.
  2. Pat the shrimp dry and slice in half lengthwise.
  3. Heat the sesame oil in a large nonstick skillet over high heat. Add the garlic and scallion whites and stir-fry until fragrant, about 30 seconds. Add the shrimp and cook until just pink on both sides.
  4. Stir in sambal oelek, tomato puree, rice wine vinegar, and soy sauce. Cook, stirring, for about 1 minute. Taste and season lightly with salt if needed.
  5. Add the pak choi and stir-fry just until wilted, about 1 minute. Remove from heat and fold in the scallion greens. Serve immediately over the hot rice.
