Directions
- Rinse the basmati rice and cook according to package directions.
- Pat the shrimp dry and slice in half lengthwise.
- Heat the sesame oil in a large nonstick skillet over high heat. Add the garlic and scallion whites and stir-fry until fragrant, about 30 seconds. Add the shrimp and cook until just pink on both sides.
- Stir in sambal oelek, tomato puree, rice wine vinegar, and soy sauce. Cook, stirring, for about 1 minute. Taste and season lightly with salt if needed.
- Add the pak choi and stir-fry just until wilted, about 1 minute. Remove from heat and fold in the scallion greens. Serve immediately over the hot rice.
