Directions
- Preheat the oven to 350° F.
- Heat a large skillet over medium-high. Add the ground beef, onion, celery, and garlic, and cook, breaking up the meat, until browned and cooked through. Drain excess fat if needed.
- Stir in the tomato sauce, sucralose, apple cider vinegar, Worcestershire sauce, mustard, and salt and pepper to taste. Reduce heat and simmer until slightly thickened, about 10 minutes. Taste and adjust seasoning as needed.
- Cut off the tops of the bell peppers and remove seeds and membranes. Bring a pot of salted water to a boil, add the peppers, and simmer until just crisp-tender, 2–3 minutes. Drain well and pat dry.
- Arrange peppers cut-side up in a baking dish. Stir half of the cheddar into the meat mixture, then spoon the filling into the peppers. Top evenly with the remaining cheddar.
- Bake until the peppers are tender and the filling is hot and bubbly, 15–20 minutes. Let rest 3–5 minutes before serving.
