Ingredients

Directions

  1. Preheat the oven to 350°F.
  2. Cook quinoa according to package directions, then fluff with a fork and set aside.
  3. Heat olive oil in a large sauté pan over medium-high heat. Add diced onions, sauté until translucent, about 2-3 minutes.
  4. Add garlic and hot sauce to the onion mixture, sauté for 1 minute. Add ground turkey and cook until no longer pink, about 5-7 minutes.
  5. Mix in paprika, cumin, salt, pepper, fire-roasted tomatoes, black beans, corn, and fresh cilantro. Cook until liquid evaporates, about 4-5 minutes, stirring occasionally.
  6. Combine the turkey mixture with quinoa in a bowl and toss to mix. Stuff the mixture into peppers placed in a 13x9 baking dish, open side up. Bake for 40 minutes.
  7. Remove from oven, top each pepper with shredded cheese. Return to oven and bake until cheese melts, about 1 minute.
  8. Serve topped with fresh cilantro, green onions, and avocado slices.
