  1. Preheat oven to 375°F. Spray an 8.5"x12" glass or crockery casserole dish with olive oil or nonstick spray.
  2. Heat the olive oil in a large frying pan, add the spinach, and stir until wilted, about 2 minutes. Transfer the spinach to the casserole dish, spreading it evenly to cover the bottom.
  3. Layer the shredded mozzarella cheese and chopped scallions on top of the spinach.
