- Cook the rice according to package directions.
- Slice the chicken thighs into 1/4-inch strips, and toss with five-spice, a pinch of salt, and pepper until evenly coated.
- Heat the oil in a large nonstick skillet with a lid over medium heat. Add the chicken and cook 2–3 minutes, stirring, until starting to brown.
- Reduce heat to low, cover, and cook 7–10 minutes, stirring once or twice, until nearly cooked through.
- In a small bowl, mix the garlic, ginger, chili, ketchup, soy sauce, and honey. Add sauce to the chicken, and cook over medium heat for 1–2 minutes, stirring, until glossy and sticky and the chicken is cooked through to 165°F.
- Add chopped spinach to the rice with water, and cook over medium heat, stirring, until the spinach just wilts. Season to taste.
