  1. Heat both of the oils in a large skillet over medium-high heat.
  2. Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  3. In the same skillet, add the broccoli florets. Stir-fry for 3-4 minutes until the broccoli is bright green and tender-crisp.
  4. Return the tofu to the skillet and add the soy sauce. Stir to combine and cook for another 2 minutes.
  5. Add the cashews to the skillet and stir-fry for an additional 1-2 minutes until everything is heated through.
  6. Serve the stir-fried tofu with broccoli and cashews hot, with additional soy sauce if desired.
