- Mix bread crumbs, half of the Parmesan cheese, half of the oregano, salt, and black pepper in a small bowl.
- Slice tofu into 1/4 inch thick slices and soak in cold water. Press tofu slices into crumb mixture one at a time, turning to coat all sides.
- Heat oil in a skillet over medium heat. Cook tofu until crisp on one side, drizzle with more oil, then brown the other side.
- Combine tomato sauce, basil, minced garlic, and remaining oregano. Spread a thin layer of sauce in an 8-inch square baking pan.
- Arrange tofu slices in the pan, spoon remaining sauce over them, and top with mozzarella and remaining Parmesan.
- Bake at 400°F for 20 minutes.
