- Dice the onion and mince the garlic.
- In a large nonstick pan over medium heat, sauté the onion with a dash of salt for 7-8 minutes.
- Meanwhile, crumble the tofu and dice the tomatoes.
- Add the garlic to the pan and cook for 30 seconds. Add the crumbled tofu and tomatoes, cooking for about 10 minutes, stirring occasionally.
- Combine the cumin, paprika, and turmeric in a small bowl. Add water to form a pourable mixture, adding a little more if needed.
- Add the seasonings and nutritional yeast to the pan, stirring well. Add the spinach and cook for another 3 minutes. Serve hot.
