Directions
- Preheat your oven to 350°F.
- Cook the quinoa according to package directions.
- Poke holes in the sweet potato with a fork and microwave on high for 8 minutes. Turn over and continue to cook until tender, about 8 more minutes.
- While the quinoa and sweet potato cook, heat coconut oil in a large skillet over medium heat and sauté the chopped onion until tender, about 5 minutes.
- Add the broccoli florets and a splash of water to the skillet with the onions, cover, and steam for about 10 minutes, or until fork-tender.
- Scoop out the cooked sweet potato flesh and mash in a bowl with water, nutritional yeast, salt, onion powder, and chili powder. Blend until smooth and creamy.
- Combine the sautéed onion, broccoli, and cooked quinoa in a casserole dish. Pour over the cheese sauce and stir to mix well. Adjust seasonings to taste.
- Bake at 350°F for 30 minutes, or until bubbly hot, and serve warm.
