  1. Heat half of the olive oil in a sauté pan over medium heat. Add the shrimp and cook, stirring occasionally, until opaque and pink, 4–5 minutes.
  2. Transfer shrimp to a plate to cool, then chop into bite-sized pieces.
  3. In a small bowl, combine the chopped red onion, lime juice, remaining olive oil, and a pinch of salt and pepper. Let sit for at least 5 minutes to mellow the onion.
  4. In a large bowl, gently toss the chopped shrimp with the diced avocado, tomato, jalapeño, the marinated onion mixture, and cilantro. Taste and adjust salt and pepper as needed.
