- Using a spiral vegetable slicer, cut the zucchini lengthwise into long, thin strands. Chop occasionally to prevent overly long noodles. Place in a colander, toss with 1/4 teaspoon salt, and let drain for 15 to 30 minutes. Gently squeeze to remove excess liquid.
- In a mini food processor, combine the basil, pine nuts, Parmesan, 1/4 cup oil, lemon juice, garlic, pepper, and 1/4 teaspoon salt. Process until almost smooth.
