  1. Preheat the oven to 375°F.
  2. Core and thinly slice the apple.
  3. Pat the pork dry, then season all over with the salt and black pepper.
  4. Heat an oven-safe skillet over medium heat with half of the olive oil. Sear the pork on all sides until well browned, about 5 minutes, then transfer to a plate.
  5. Add the remaining oil, the sliced apple, and the cinnamon. Cook, stirring, until the apple softens slightly, 2–3 minutes.
  6. Stir in the apple cider and Dijon mustard, scraping up any browned bits from the pan.
  7. Return the pork to the skillet and spoon some of the apple mixture over the top.
  8. Transfer the skillet to the oven and roast until the pork reaches 145°F at the center, about 15 minutes.
  9. Rest the pork for 5 minutes, then slice and serve with the apple–cider pan sauce spooned over the top.
