Directions

  1. Use leftover cooked rice, else Cook to package directions to make 2 cups
  2. Whisk eggs with 2 T water, cheese, and pinch of salt and pepper
  3. Add 1.5 t oil to skillet and heat rice 1 minute until cooked through. Divide between 2 bowls
  4. Add another 1.5t oil to skillet and cook kale, garlic, pinch of salt 1-2 minutes. Divide between bowls.
  5. Add remaining T oil to skillet. Scramble eggs and divide between bowls.
  6. Top with avocado and pico de gallo
