  1. Slice chicken thighs into strips. Heat half of the olive oil in a pan over medium-high heat. Add chicken and sauté until cooked through to 165°F and no longer pink, about 7-10 minutes.
  2. In a small bowl, whisk together the soy sauce, sugar, sesame oil, ginger, and Sriracha; set aside.
  3. In a large pot of boiling water, cook the egg noodles according to package instructions; drain well.
  4. Heat the remaining olive oil in a large skillet or wok over medium-high heat. Add garlic, mushrooms, bell pepper, and carrot. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in peas and spinach until the spinach has wilted, about 2-3 minutes.
  5. Stir in the egg noodles, cooked chicken, and soy sauce mixture, and gently toss to combine. Serve immediately.
