Ingredients

Directions

  1. Cook the farro according to the package directions; drain and set aside.
  2. Warm the olive oil in a large pot over medium-high heat.
  3. Add the chopped onion, carrot, and celery. Cook, stirring occasionally, until softened, about 5 minutes.
  4. Stir in the minced garlic and bay leaves and cook until fragrant, about 1–2 minutes.
  5. Pour in the vegetable broth and diced tomatoes, then add the chickpeas, dried basil, and dried oregano. Bring to a gentle simmer and cook uncovered for about 10 minutes to meld flavors.
