Citrus Spinach Salad

Ingredients

• Spinach

  raw

  6 cup or 180g

• Oranges

  1 cup, sections or 180g

• English walnuts

  ½ cup pieces or chips or 60g

• Raisins

  seedless

  ½ cup (not packed) or 73g

• Goat cheese

  soft

  2 oz or 57g

• Lemon juice

  ½ lemon yields or 24g

• Olive oil

  4 tbsp or 54g

• Salt

  table

  1 dash or 0.4g

• Black pepper

  ground

  1 dash or 0.1g

Directions

1. Combine the spinach, orange sections, walnuts, raisins, and crumbled goat cheese in a large bowl.
2. In a small bowl, whisk the lemon juice with the olive oil, a pinch of salt, and pepper until emulsified. Taste and adjust seasoning.
3. Drizzle the dressing over the salad and toss gently to coat. Serve right away.
