Directions
- Heat about a third of the oil in a large pot or Dutch oven over medium heat. Season the andouille sausage and chicken pieces with half of the Cajun seasoning.
- Brown the sausage in the hot oil, then remove with a slotted spoon and set aside. Add the remaining oil to the pot and sauté the chicken until lightly browned. Remove with a slotted spoon and set aside.
- Sauté the diced onion, bell peppers, and celery until the onion is soft and transparent. Add the minced garlic and cook until fragrant, about 30 seconds.
- Stir in the crushed tomatoes, salt, pepper, thyme, oregano, red pepper flakes, hot sauce, Worcestershire sauce, and the remaining Cajun seasoning. Add the sliced okra, chicken, and sausage. Cook for 5 minutes, stirring occasionally.
- Add the rice and chicken broth, bring to a boil, then reduce heat to low-medium. Cover and let simmer for about 20 to 25 minutes, or until the liquid is absorbed and the rice is cooked, stirring occasionally.
