  1. In a large bowl, combine the peanut butter, rice vinegar, soy sauce, sesame oil, honey, and lime juice. Whisk until smooth.
  2. Stir in the garlic, ginger, and red pepper flakes. Whisk in the warm water until the sauce is smooth.
  3. Adjust the julienne blade on a mandoline to the ⅛-inch-thick setting. Carefully run a cucumber down the blade to form noodles. Repeat with the other cucumber.
  4. If you don't have a mandoline, use a julienne peeler or a spiralizer to make the noodles.
  5. Place the cucumber noodles on a plate or in a bowl. Drizzle with the peanut sauce and toss gently. Top with cilantro and peanuts. Serve and enjoy!
