- Bring about 2 cups water, one-third of the oil, and the salt to a boil in a 2‑quart saucepan. Stir in the rice, return to a boil, cover, reduce heat to low, and cook until the water is absorbed and the rice is tender, about 15 minutes. Remove from heat, fluff with a fork, and let stand covered for 5 minutes.
- Meanwhile, cook the lentils in a pot of boiling salted water until just tender, 15 to 20 minutes. Drain very well.
