Ingredients

Directions

  1. Soak the lentils in a bowl of water for 15 minutes.
  2. Dice the onion and chop the bacon into small pieces.
  3. In a saucepan over medium heat, cook the bacon until crispy. Add the onion and sauté until translucent.
  4. Add the lentils, diced tomatoes, tomato juice, thyme, and vegetable broth. Cook for 25 minutes.
  5. Blend the soup until smooth. Stir in the red wine vinegar, and season with salt and pepper to taste.
  6. Serve and enjoy!
