  1. Preheat oven to 350. Mix eggs thoroughly in medium bowl, season with salt, pepper, garlic powder.
  2. Chop onion and pepper, mix into eggs. Shred cheddar cheese, mix half into egg/vegetable mixture, set half aside. Add 2 Tablespoons of water to eggs and mix well. Spoon into greased muffin pan, spread cheese evenly over top of muffins.
  3. Put muffin pan into 350 oven, bake about 20 minutes, until eggs are set up and not jiggly. Remove, cool 5 minutes and remove from pan. Top with a healthy salsa if desired!
