  1. Warm the olive oil in a large nonstick skillet over medium-high heat. Add the ground turkey and cook, breaking it up, until mostly browned, 4–5 minutes.
  2. Add the sliced onion, chopped carrots, and red bell pepper. Stir in the lemon zest, cumin, cinnamon, dried coriander (or ground coriander seed), paprika, cayenne, and a pinch of salt and pepper. Cook, stirring occasionally, until the vegetables soften and the turkey is cooked through, 4–6 minutes.
  3. Stir in the tomato paste until it coats the mixture. Pour in the chicken broth, then add the chickpeas and raisins. Bring to a boil, reduce to a gentle simmer, and cook until slightly thickened, 6–8 minutes.
  4. Remove from the heat. Stir in the lemon juice and chopped cilantro; taste and adjust salt and pepper as needed. Serve hot.
