  1. Use a spiralizer to cut zucchini into noodles or carefully use a peeler to do so.
  2. Heat olive oil in a large sauté pan over medium-low heat for 1 minute. Add garlic and crushed red pepper flakes, cooking for 1 minute while stirring constantly.
  3. Add shrimp to the pan and cook, stirring as needed, until pink and cooked through, about 3 minutes. Season with salt and pepper, then transfer shrimp to a bowl using a slotted spoon, leaving liquid in the pan.
  4. Increase heat to medium. Add white wine and lemon juice to the pan, scraping any brown bits from the bottom with a wooden spoon. Cook for 2 minutes.
  5. Add zucchini noodles and cook, stirring occasionally, for 2 minutes. Return shrimp to the pan and toss to combine. Season with salt and pepper, garnish with Parmesan cheese, and serve immediately.
