- Heat the oil in a large non-stick fry pan over a medium to high heat. Add in the chuck steak and brown for 2-3 minutes. Mix in the onion, ginger, turmeric, garam masala and coriander and cook for a further 1-2 minutes, until fragrant.Season with salt and pepper and add in the chillies, tomato, capsicum, carrot and zucchini. Bring the mixture to a simmer and transfer to a slow cooker for 6-8 hours. Alternatively, cook on the stove on a gentle simmer for 45-50 minutes, stirring occasionally, until the meat is tender and falling apart and the sauce is rich and thick.Serve with rice, couscous or multigrain bread, plus fresh coriander and natural yoghurt.
