Spinach Artichoke Zucchini Bites

Ingredients

• Cream cheese

  Low fat

  4 tbsp or 60g

• Heavy whipping cream

  Fluid

  1 cup, fluid or 238g

• Mozzarella cheese

  Part skim milk

  2 oz or 57g

• Parmesan cheese

  Shredded

  2 tbsp or 10g

• Artichokes

  (globe or french), cooked, boiled, drained, with salt

  ½ cup hearts or 84g

• Spinach

  Frozen, chopped or leaf, unprepared

  ½ cup or 78g

• Garlic

  Raw

  1 cloves, minced or 3g

• Crushed red pepper flakes

  2 tsp or 0.6g

• Salt

  Table

  1 dash or 0.4g

• Pepper

  Spices, black

  1 dash or 0.1g

• Zucchini

  Summer squash, includes skin, raw

  4 medium or 784g

Directions

1. Preheat the oven to 400°F and line a large baking sheet with parchment paper. In a large bowl, mix together the cream cheese, mozzarella, Parmesan, artichokes, spinach, garlic, and crushed red pepper. Season with salt and pepper.
2. Spread about a tablespoon of the cream cheese mixture on top of each zucchini slice. Bake until the zucchini is tender and the cheese is melted, approximately 15 minutes. For additional color, broil on high for 1-2 minutes.
